Ester Physical Properties & Structure

Esters are a class of organic compounds derived from carboxylic acids, in which the hydrogen atom is replaced by a hydrocarbon group, in the form R-CO-O-R’. The R’ group signifies an alkyl or aryl group which can result in a range of different ester compounds being formed.

Ester compounds are typically formed when an carboxylic acid or alcohol group reacts with an acid, in a process known as esterification.

Ester Derivatives

Esters are commonly referred to as derivatives of carboxylic acids, but the class of compounds also has its own derivatives. Similar to both carboxylic acids and esters are anhydrides, and amides, albeit with different chemical and physical properties.

The Reactivity of Esters

Esters compounds are reasonably reactive due to the electrophilicity of the carbon in the carbonyl group. They can undergo a range of different reactions, based on the conditions.

Esters will form carboxylic acids in hydrolysis reactions, esters in alcoholysis and amides in aminolysis. It is also possible for esters to form primary or tertiary alcohols, or aldehydes under the right reaction conditions.

Applications of Esters & Derivatives

Due to the naturally sweet aroma of esters, these compounds and their derivatives are often used in perfumes, flavorings and essential oils and related products, making them popular in food and drink, and personal care products. In the latter, they can also be utilized as preservatives.
